Are the brake pads included in this? I can't seem to find any pads for this specific set anywhere or I probably just don't know exactly what I'ma looking for

This kit comes standard with Wilwood BP-10 Brake pads meant specifically for the Wilwood calipers.

Is this a direct "swap out" of the OEM calipers, and rotors? And do you use the factory mounting hardware?

They're "close" to a direct bolt-on swap for the stock calipers and rotors. They do use a caliper mount adapter, and the brakes won't work out of the box with your factory brake lines without modifications. Wilwood does offer drop-in Flexline brake lines at additional cost.

How much weight reduction on a 2013 Shelby GT500? Thanks, Larry

Probably not much, honestly. The only components of this kit that are lighter than the stock Brembos are rotors, thanks to their two-piece design.
